I will handle anything. Presto has built in a pressure indicator/lock that makes it clear when it is still under pressure and makes it impossible to open when it is. I have used many pressure coolers and this one is the best so far. Would also work for canning. Spend the extra money and buy the stainless model. Makes tender meat out of the tough stuff you never buy, well, now you can and is it ever gooood. I'm not impressed with the cook book - - in fact it is not accurate for times at all. Plan on giving your meat more time under pressure. The lid is a bit tricky to close, but if you take time to READ the instructions, you will find the answer is there. lol Voice of experience.
