Other Comments: When processing deer, I use these Chicago Cutlery knives exclusively. They are amazingly sharp and stay sharp much longer than any expensive knife I have ever used. When they do need a touch up, I just hit them with a sharpening steel for a minute or so and they are razor sharp once again. I just bought this knife for an extra as my original one this size was purchased in the early 1990's. It is still as sharp as ever.The small size is perfect for trimming or even boning despite it's small size. I highly recommend these knives. Don't let the inexpensive price fool you. I have four or five other $200 knives that just stay in the drawer when processing meat as they can't come close to the performance of these knives. You will not be dissappointed with any of these series knives. I also highly recommend the 5" boning knife.
