I use it frequently to help tenderize traditionally tougher cuts of meat such as briskets. I usually brown the meat on all sides to get a good sear with olive oil or peanut oils to keep the smoke to a bare minimum. I then add just enough beef stock (for a brisket) to nearly cover the entire cut. I seal the cooker and place the pressure regulator on the post and allow the pressure to build. Once the pressure has risen to a regular tempo, I reduce the heat and allow the meat to cook for approx 7 -8 minutes a pound. Afetr allowing the pot to cool and the pressure to subside I open the cooker, add my veggies and herbs and cook till the veggies are translucent and cooked through.
