Wednesday Recipes: Waffle Iron Recipes

Yesterday we discussed 10 crazy ways you could use your waffle iron that the manufacturer, nature, and the Universe never intended. However, while researching that article, we stumbled across a veritable hoard of recipes for things you can cook in a waffle iron other than the usual waffles and omelets. If these recipes were little pieces of bullion, we would be worried about angering the dragon they belonged to because that’s just how many of them there are. So, presented below for your enjoyment are some of the quirkiest and quickest recipes for you to try out with your trusty waffle iron this spring

Waffle Brownies

Ingredients
1 box brownie mix, prepared according to directions
1 egg (in addition to any eggs the brownie mix requires)

Directions
Preheat a waffle iron. Mix the egg into the prepared brownie batter. Place about 2 tablespoons to 1/4 cup brownie batter into the waffle iron, depending on the waffle iron instructions and capacity. Cook until done, about 5 minutes. Serve with a topping of vanilla ice cream or other toppings of your choice.


Waffle Iron Quesadillas

Ingredients
1 tablespoon olive oil
1 poblano pepper, thinly sliced
1 jalapeño, seeded and diced
4 medium Old El Paso™ flour tortillas
1–to 1-1/2 cups pepper jack cheese, grated
2 teaspoons Old El Paso™ taco seasoning mix
Sour cream, for garnish
Salsa, for garnish
Cilantro, for garnish

Directions
In a small skillet over medium heat, add a drizzle of oil followed by the poblano and jalapeno peppers. Cook for a minute or two until they just start to soften. Season the peppers with a small pinch of salt.

Heat your waffle iron and cut tortillas to fit the waffle iron if necessary. Place a tortilla on the waffle iron and add a small amount of grated cheese, followed by about half of the pepper mix. Sprinkle on some Old El Paso™ taco seasoning mix and another good handful of cheese. Top with a second tortilla and close the waffle iron.

Cook the quesadilla until the cheese is melted and bubbling out and the tortilla is lightly browned. Remove quesadilla using a fork or knife, and cut into quarters for easy serving. Garnish with extra salsa, cilantro and sour cream as desired.

Funfetti Cake Waffles
Ingredients
1 box Funfetti Cake Mix
1 cup water
1/3 cup oil
3 eggs

Directions:
Mix together the cake mix, water, oil, and eggs in a large bowl until well combined.

Drop 2 1/2 ice cream scoops of the cake batter into a preheated Belgian waffle iron and cook for three minutes. Use less cake batter if you’re using a smaller waffle iron.

Serve with a scoop of ice cream and a drizzle of chocolate syrup.
