With the dog days of summer in full force, you don\u2019t want to be stuck in a hot kitchen preparing snacks all day for yourself or the kids.\u00a0 These quick and easy recipes will not only get you out of the kitchen in a hurry, they are healthy and refreshing too.<\/p>\n

Banana Chocolate Chip Ice Cream Bites
\n<\/strong>All you have to do is slice and freeze about 6 very ripe bananas for an hour and a half. Set the bananas out for about 5 minutes to let them soften a bit before pulsing\/blending them in a food processor<\/a> or blender<\/a> from Buydig.com until smooth and creamy, and then stir in the mini chocolate chips. Scoop the ice cream into a greased mini muffin pan, filling each cup almost full, then sprinkle each one with a few more mini chocolate chips. Place the bites in the freezer for about an hour and then use a knife to pop each one out. Yogurt Strawberries
\n<\/strong>Dip strawberries, halved or whole, in vanilla yogurt. Greek yogurt might be best, because it’s thicker.\u00a0 Then put them on a baking pan<\/a> lined with parchment or wax paper and freeze.<\/p>\n

PB, Strawberry and Banana Quesadillas
\n<\/strong>You\u2019ll need 2 tortillas, 1\/2 – 1 banana, 2 – 4 strawberries, 1 – 2 tablespoons natural peanut butter, 1 – 2 tablespoons of whatever flavored jam you choose.\u00a0 Over medium heat, preheat a pan<\/a> that’s large enough for your tortilla. Spread the peanut butter on one side of a tortilla. Spread jam on one side of another tortilla. Make enough banana and strawberry slices to cover the bottom of one tortilla.\u00a0Place the other tortilla, jam or peanut butter side down, on top of the other tortilla. Cook in the pan until the bottom is crisp. Flip over and cook the other tortilla until crisp. Serve immediately. Store any leftovers in the refrigerator.<\/p>\n
