The Santoku is a Japanese cook's (or chef's) knife, featuring a low-tip style with a broad blade. The cutting edge is minimally curved, so it provides less rocking action than a European-style cook's knife. A cross between a cook's knife and a vegetable chopper, each knife features an exceptionally sharp cutting edge that slices through vegetables and meats with more ease than the thicker cook's knife. Alternating hollows on each side of the blade create air pockets and minimizes the food's ability to stick to the edge, which makes for easier, more efficient slicing. Crafted from a single seamless piece stainless-steel, the knives are then hardened and tempered for maximum edge retention, ease of sharpening, and long-lasting durability.
