I highly recommend both the Unison sear and slide products. I bought when they first hit the market. This piece is very versatile as a real sear is possible with perfect cleanup. Is a real, hard, high heat carmelizing sear possible? Kinda. The slight tradeoff is easy cleaning. Be aware, though, that this is not cast iron: low and slow is a little higher and quicker. It's responsive to convection, however.

I've always wanted a Dutch oven, and when I was offered this Calphalon non-stick one in exchange for an honest review, I was thrilled! As soon as it arrived, I washed it and got to work steaming some vegetables for dinner. I was amazed at how perfectly the different sizes of carrots, onions, and broccoli cooked...especially since I left them in when I added the chicken. The entire meal was done in the Dutch oven and came out wonderfully. I've also used it to make chicken stew, homemade pasta sauce, and my signature chili that I normally make in my crockpot. This might be replacing my aging crock pot after all! I love Calphalon cookware, and this has turned out to be a great addition to my collection.
