Not really a "Dutch oven"

This item isn't really a "Dutch oven," but rather what professional chef's call a rondeau. A true Dutch oven has a heavier lid, generally made of the same material as the pot itself (such as cast iron), whereas a rondeau will have a lighter lid made of steel or glass. But, to quote the Bard, that which we call a rose by any other name would smell as sweet, and so whether we call this a rondeau, a brasier, a brazier, a Dutch oven, or a casserole, it is still a worthwhile addition to any kitchen.

Recently spent a lot of money on a glass cook top, only to read recommendations that I NOT use my heavy enameled cast iron Dutch oven on it. Very sadly, I put it away and searched for an acceptable replacement. So far, I've been very happy with the Calphalon Tri-Ply Dutch oven. It's sturdy, not nearly as heavy as the old pan, and is currently simmering a balsamic chicken dish for supper. I like the glass cover so I can check on progress without lifting the lid. It's the quality I expect from Calphlon.

I have had trouble going from searing beef to roasting. Other cookware seems to lose heat in the transfer. The aluminum core retains heat and ensures an evenly cooked roast.

I recently bought a Tri-Ply set, which had a 6 qt. stock pot and a 3.5 qt chef's pot. I really needed something in between to cook pasta, etc. and this fit the bill. Very pleased with the whole set, cooks and cleans nicely, especially if you use Barkeeper's friend. I think Calphalon should include this size pot to their sets.

Hello, I just purchased your Calphalon Tri-Ply stainless steel Dutch Oven; I needed it to cook Beef Rouladin (first time attempt). I used it both on the stove and in the oven, and the lid did not melt. Ha! (To me, the clear lid looked like it would not withstand oven heat, however the literature said up to 450 degrees.) So No damage to lid at all! My Beef Rouladin turned out superbly, I'm sure in part due to your most excellent Dutch Oven. Afterwards, I hand-washed it and it cleaned up quickly. Needless to say, I am extremely pleased with this pan; it looks elegant and just reeks with quality! Thank you for making such a wonderful pan!
